Not a snow day per se but…
it is snowing lightly and as the temperature drops, the snow is accumulating on the trees and grounds around my house.
I am sitting in my living room looking through our big bay window. I am watching the snow fall and it just makes everything seem quieter. It’s such a beautiful view. I am all sunken into one of our big cushy leather chair and cannot see the road…only the snow and the trees.
On my way back from getting my nails done today (very very important, you know haha), it had begun to snow and I was remembering a blog post I read this morning. The post was on a blog belonging to someone whom I thought I knew but as it turns out, I was wrong.
In any event, she spoke about soup and feeling yucky and I felt bad for her and remembered that she loved to cook and loved to make potato soup. (At least the person I thought I was remembering did these things). It made me think, “Hmmm good day for soup. My girl has to work today and I’d like to send her off with a nice bowl of soup.”
My mind whirled around thinking about the ingredients and should I add quinoa, barley, bulgur or tagliatelle as “bulk.” As I was sautéing veggies… carrots to a light caramelize state, mushrooms, scallions I was thinking what to do next. I don’t like soups that lack “substance” i.e., are too liquidy without any bite so to speak. So after sautéing veggies at the beginning, I sprinkle in some flour and cook the rawness of it off before adding liquid. I don’t make it a chowder but it does give the “thin” broth some more substance. I had decided on some Anenili (sic) pasta (tiny little circles) but it just didn’t seem to happen for me.
I remembered that I had a couple of cups of peeled and cubed butternut squash in the fridge so I dumped them in. Then cooked it for a while until the squash was cooked thru. It was really nice. Then just before serving her some (after we got back from school), I dumped in some frozen chopped spinach (that I keep on hand in case I am out of fresh). It tasted very very nice. At this point I would add some nutmeg but the herbs I already added were good enough.
I almost always top off a dish like this with some red wine vinegar but opted that out. Vinegar is good to splash into cream soups or into a hearty veggie dish as well.
And that’s my story for today. I know I still have some reviews and recipes to put up on my pages and I’ll get to it at some point soon.
