I am so tired of the snow….omg…MAKE IT STOP!!!!

I am in the process of making potato soup. I don’t have a recipe for soups I make. I just go for it lol.

Tonight I caramelized mushrooms w/some thyme, tarragon, salt and pepper…..it’s hard for me not to want to eat every last bit of them…. I love my ‘shrooms

I cooked off the potatoes and then sauteed the onions and garlic, added the flour then the skim milk….nutmeg, potatoes and am waiting for it to thicken as I type this post.

I added some chopped frozen spinach and a wee bit of parsely too. Should be scrummy. ūüėÄ

Psst….a good tip is to add a splash of your favourite vinegar e.g. red wine or a flavoured vinegar to ¬†your cream soups….it helps cut back on the fat however, even when I was cooking vegan and now that I’m using skim milk, I find it adds tremendous flavour. I added a splash of tarragon vinegar and it now tastes AMAZING!

I love love love soup. My favourite daughter is at a friend’s house watching the Academy Awards. ¬†I hope she leaves earlier than later…I don’t like her driving around in that tiny car of her in the snow on the back roads of Pennsylvania.

Here is my proposed menu for today. I say “proposed” because sometimes at the last-minute I’ll change the recipe or add something to the menu.

I just started cooking the make ahead stuff for the Vegan Mushroom Lasagna РIt contains mushrooms, kale, marinara and béchamel sauce.



Bourbon Glazed Salmon Steaks

Mushroom Lasagna

Roasted Asparagus

Crescent Rolls (vegan of course)

Dessert ~ Two small cakes from Vegan Treats

I can’t wait to dig in!!

I’m gonna tell you tho…. the Tofu Xpress is AMAZING!!! It has changed the way I view and cook tofu!

Yep….here it is, in all it’s “glory” my very first vegan toll house pie! Several things I need to change…like adding more flour….less butter…but everyone loved it.

I just wish I could have tasted it (sugar makes me very ill).


Ready?? Here it is…..


As you can see I had to quick snap a photo before it was all gone. Actually number one son did it for me….my camera was in another room and I was afraid to leave it LOL

I’ll post the recipe here shortly.¬† I considered using The Vegg but then used Ener-G instead as the latter is for stabilization and not necessarily for richness.

Everything else was a success IMHO … I was the only one who liked my fresh cranberry relish but I did not care. It was wonderful.

All in all I am thankful to have a family I love … all four of them…with all my heart…

AND I am thankful to be done cooking large amounts of food for a couple of weeks LOL

¬†…as my Grandma would say… she also said “Holy Smokes” and that there was a “Man in the Moon” and also, the Moon was made of cheese…. how odd that an entire planet would be made of a protein for the man that lives there….

Curiouser and Curiouser (said in a Sheldon Cooper voice…Big Bang Theory).

Oh!! She also said “string beans” and today they are commonly known as “green beans”


I remember pinching off the ends of those beans, whichever you called them, after we harvested….just a little tidbit of my life.

I have nothing to post…well I do but it’s boring…recovering from Sandy, calling for estimates, blah blah.

So tonight I thought I’d simply post what we had for dinner.

I love this product because you don’t have to use the sauce if you don’t want to…typically I do lol

I added some string beans w/some salt to the oil and heated them up and then dumped in the package. Thawed out the sauce in a bowl of hot water.¬† The beans¬†caramelize nicely. I added the sauce with just a wee bit of water to make “more” sauce.¬† Served it with white rice I had nuked to perfection.

A hit!¬† I do it different every time. I’m out of frozen kale and the spinach I have is in blocks for bigger uses. It was very tasty. I did not want to stop eating it.

For us (my dh) carnivores. I am heating up a chicken pot pie in the oven. It smells heavenly….combined w/the orange chicken…ahhhhh

Who needs a holiday meal? Just come here and sniff about LOL

Tonight’s dinner for my little vegan princess….

I wanted this to look artsy but I suck at that apparently LOL

I made a variation of my mushroom pie…used unsweetened almond milk, added tarragon, used baby ports, added nutmeg,¬†freshly ground salt and pepper, a cup of chopped collard greens, ¬†and a teeny kick of cayenne…. AND used little puff pastry shells…. We loved the little “hats.” LOL

I asked my dd if she wanted one or two. She said “one” but I made two and that little child ate both. YAY. I knew it. Do I know my kid or what??

The almond milk worked splendidly. I am still learning about milks. It was definitely creamier than other milks. If I had thought ahead, I would have thawed out some cashew cream … which recipe you can find here on “Vegan Cooking for the Carnivore”

This dude is amazing. I can’t wait to try some of his other recipes.

Well that was my excitement of the day except for the mini rain shower we had when it was sunny. It was nice, in my house, all quiet….just listening to the rain drops….

DD has plans tonight so I made her dinner a little early.¬† I made a Carbonara-Primavera Pasta dish for her. And I made it all up in my head and I must say…it was very good. I’ll post the recipe here on Road Tests shortly.

It was creamy with bits of smokey tempeh (or as I say “fake bacon”),¬† sliced baby portas and peas with some spices added in.

It was a hit!! I’m so happy when something I make up works well. I wonder if I can freeze it… milk/cream dishes don’t freeze well but there’s none of that in here…. hmmm. I’ll try it for another time. Maybe put a sample in the freezer and next time make a double batch. There’s enough leftover for two snacks or a large meal. We’ll see what HRH wants me to do with it. lol
