Happy Spring! Did ya miss me?

Lots of changes in my life in the past two years. Check out “About Me” for  synopsis.

Altho my daughter is  no longer vegan or vegetarian, I will continue to post yummy recipes here and just chat about this, that and the other (as my friend, Shawn, likes to say lol).

After moving out July 2014 and then again April 2015, life has been topsy turvy and the dating world is not all it’s cracked up to be.  I’ve met some interesting men and some are friend now on Facebook.  Had my share of spamming attempts and I can smell them a mile away.

My ex and I are on friendly terms mostly. In April it will be 35 years since our first date. Long time.  He is very faithful w/alimony payments and whatever else was agreed to amongst us at mediation.

My son graduates in May. I’m so proud of him. He found his niche after a couple of changes in his major. He got engaged and they have been together almost 6 years. She’s a doll and I just love her. My daughter is a freshman at the same university and she makes me proud all the time. They are all my loves.

Tomorrow is Easter. I won’t be seeing my kids 😦  I typically don’t get to see them on holidays but after I move (yes again but this is it for a while lol) in May, I’ll only be 10 mins from them and I’ll be able to see them before they head up to their father’s.  Right now I’m 1.5 hours from them and it’s been difficult for me.

I’m done for now. I want to wish you a blessed Easter!

…to mochi land!

 

I found the rice flour I needed to make mochi yesterday at a market that is primarily Japanese foods. This old guy is married to a Japanese woman, who is his same age. They had TWO boxes left and I got them! Seems all the Asian markets are getting low on this flour. Chinese New Years is soon and this is usually only made once/year on new years’.

I went on the website for the producers of the flour, Koda Farms, to check out facts on the product and hopefully to gain more insight. I learned some stuff but not what I was looking for but…..

THE COOKBOOKS CAME TODAY!!!

I will post all about them later. I need to read them thoroughly. They’re very thin so it won’t take long.

I give up!

 On bringing home takeout for my daughter.

My husband and I went to a  little Thai restaurant today for lunch. I first went to the Vegetarian menu to see what the choices were and if there was anything I could have altered to bring home for our loving kid. (sarcasm intended)

I settled on a soup Yom Kum or something like that. It has veggies in a broth with lots of herbs infused. I made sure there was no dairy or eggs and that the broth was vegan. I quizzed the waiter and also was told that if they do put fish sauce in this soup, he will ask for it without it but he didn’t believe they did as it would overtake the herb scent/aroma.

I was all excited to bring this home for her to eat before she had to go to work. I sent her a text. She writes back, “How do you know its vegan.” I wrote back that my husband as my witness, I quizzed the server. When I arrived home I called her to the kitchen. I told her what I said to the waiter, etc.

She didn’t tell me this, but she told my husband (while I sat in the other room) that she’s not going to eat it. She doesn’t trust it. OMG.

I just went and tested it. It tastes sooooo vegan that I wouldn’t be surprised if it started sprouting roots. The broth is very lovely tho with hints of several herbs including cilantro.

I give up. Seriously.

I am baking a sweet potato for her while she’s out w/my husband walking the dog.

She won’t need to do very much to make me lose it if she rejects the sweet potato…..

That’s not exactly what I said to my child when she told me she was “now a vegan.” I think it was something like, “huh” as in a matter of fact, that’s interesting sort of sound.

I knew what this meant, as long ago I decided to try vegetarianism and opted not to go to “extremes” by being a vegan. I quickly decided that while I loved veggies and fruit and grains, I was not willing to give up an occasional steak or other meats.

It has been approximately 2-3 months (seems like a year lol) since her announcement and since our entire household was turned upside down with respect to eating meals. It was already in a loop from my son’s departure for his first year of college in that we went from having to serve huge quanitities of food to satiate him, to just the three of us (my daughter ate like a bird as it was) …. then it was two plus one=Two “regular” eaters and one vegan.

This is a struggle as I have not yet adjusted to my son’s absence from the family meals.  Do I cook separate meals? Sometimes. Do I cook meals that we all can eat, sometimes. Am I totally and utterly confused, lacking a cooking routine, and sometimes feel as if I’m insane? AB-SO-LUTELY.

This is a place for me to talk to myself and let others see me deteriorate mentally as I am constantly searching for recipes, definitions, and legitimate cookbooks that I can understand.
