Here is my proposed menu for today. I say “proposed” because sometimes at the last-minute I’ll change the recipe or add something to the menu.

I just started cooking the make ahead stuff for the Vegan Mushroom Lasagna – It contains mushrooms, kale, marinara and béchamel sauce.



Bourbon Glazed Salmon Steaks

Mushroom Lasagna

Roasted Asparagus

Crescent Rolls (vegan of course)

Dessert ~ Two small cakes from Vegan Treats

I can’t wait to dig in!!

Get it??? It’s Day 7 of the “12 Days of Christmas” ~ Actually the song was meant to start on Boxing Day

…but this is not why I am writing this post LOL


Working on my Cmas day menu. I have a few things planned and one new vegan product I am trying and will give the overall review after Cmas Day.

Gifts are mostly done. Waiting for something from international airmail and it may not arrive. My kids are good about this sort of thing. Always have been. I am grateful 🙂

In the meantime I was introduced to this blog by Jaime Karpovich (Save the Kales) and specifically their newest project Betty Goes Vegan” aka “The Betty Crocker Project I loved it so much, I pre-ordered the book!  Can’t wat to see it. I have a very old BC cookbook that’s falling apart. It was the first cookbook I bought for myself over 30 years ago.

Can’t believe I haven’t posted since Thanksgiving!! What’s up with that? LOL

…I see you!

Remember that little game? I loved doing that with children, still do. However it is not why I’ve entitled this post as such.

My beautiful girl received this kit for Cmas from Santa. Yes, I still do Santa, but only one gift each. *shrug* It’s a mom thing plus it’s fun…having that extra present under the tree that wasn’t there before but now when you wake up, ta-da!

Back to the fungi ~ She started this kit about a month or so ago. And finally they’re starting to peek out but from up inside where it’s dark. Now almost everyone knows that ‘shrooms like the dark, humid atmosphere combined with just the right soil. However the instructions stated they should be placed in indirect sunlight. I would have done the opposite if it were my kit, but she followed the directions like a good little do-bee.

We are looking forward to a nice crop or two of these lovely delicacies. She and I are mushroom freaks, the boys not so much. Who cares about them anyway 😉

I can’t wait until this year’s Mushroom Festival in Kennett Square with Maya!
