Is it wrong that….

I have a seafood salad splotch on a vegan cookbook I was reading?

I love cookbooks. I read them like novels.

I’ve been reading ….

Betty Goes Vegan

Quick-Fix Vegan

Vegan Cooking for Carnivores

All three are fabulous in their own way! I highly recommend reading them.

I have made recipes from all three and they have come out beautifully. More to come on that topic.

So that’s basically what I’ve been up to these past few months (in between being violently sick on and off).

I’m gonna tell you tho…. the Tofu Xpress is AMAZING!!! It has changed the way I view and cook tofu!

Until next time…

Catching Up

Yes, I’m trying to play catch up.

Sorry for the long hiatus…some of you have contacted me and I really appreciate your concerns.  Things just got busy and I didn’t have time…I’m sorry.

I plan on posting a review of the things I’ve eaten lately … and then some new stuff.

I’m so A/R…I have to post the older stuff before the newer stuff…Heaven forbid it’s out of order.

How Type A .. A/R … can one be???

I’m back on the groove machine and I’ll be here mighty soon.

Thanks for being patient!

Five days and counting!!

Get it??? It’s Day 7 of the “12 Days of Christmas” ~ Actually the song was meant to start on Boxing Day

…but this is not why I am writing this post LOL

Working on my Cmas day menu. I have a few things planned and one new vegan product I am trying and will give the overall review after Cmas Day.

Gifts are mostly done. Waiting for something from international airmail and it may not arrive. My kids are good about this sort of thing. Always have been. I am grateful 🙂

In the meantime I was introduced to this blog by Jaime Karpovich (Save the Kales) and specifically their newest project Betty Goes Vegan” aka “The Betty Crocker Project I loved it so much, I pre-ordered the book!  Can’t wat to see it. I have a very old BC cookbook that’s falling apart. It was the first cookbook I bought for myself over 30 years ago.

Can’t believe I haven’t posted since Thanksgiving!! What’s up with that? LOL

Happy perusing and I’ll be back soon.

….the bell tolls for…

Yep….here it is, in all it’s “glory” my very first vegan toll house pie! Several things I need to change…like adding more flour….less butter…but everyone loved it.

I just wish I could have tasted it (sugar makes me very ill).

Ready?? Here it is…..

As you can see I had to quick snap a photo before it was all gone. Actually number one son did it for me….my camera was in another room and I was afraid to leave it LOL

I’ll post the recipe here shortly.  I considered using The Vegg but then used Ener-G instead as the latter is for stabilization and not necessarily for richness.

Everything else was a success IMHO … I was the only one who liked my fresh cranberry relish but I did not care. It was wonderful.

All in all I am thankful to have a family I love … all four of them…with all my heart…

AND I am thankful to be done cooking large amounts of food for a couple of weeks LOL

Tarragon Roasted Turkey Breast

Roasted Turkey Gravy

Sour Cream Mashed Potatoes

Glazed Oven Roasted Sweet Potato Chunks

Sautéed Thyme infused Zucchini Rounds

Fresh Cranberry Relish with Apples and Walnuts

Toll House Pie

Everything except the obvious is vegan friendly for my beautiful daughter!

Have a Blessed Day!

Holy Cow!!

…as my Grandma would say… she also said “Holy Smokes” and that there was a “Man in the Moon” and also, the Moon was made of cheese…. how odd that an entire planet would be made of a protein for the man that lives there….

Curiouser and Curiouser (said in a Sheldon Cooper voice…Big Bang Theory).

Oh!! She also said “string beans” and today they are commonly known as “green beans”

I remember pinching off the ends of those beans, whichever you called them, after we harvested….just a little tidbit of my life.

I have nothing to post…well I do but it’s boring…recovering from Sandy, calling for estimates, blah blah.

So tonight I thought I’d simply post what we had for dinner.

I love this product because you don’t have to use the sauce if you don’t want to…typically I do lol

I added some string beans w/some salt to the oil and heated them up and then dumped in the package. Thawed out the sauce in a bowl of hot water.  The beans caramelize nicely. I added the sauce with just a wee bit of water to make “more” sauce.  Served it with white rice I had nuked to perfection.

A hit!  I do it different every time. I’m out of frozen kale and the spinach I have is in blocks for bigger uses. It was very tasty. I did not want to stop eating it.

For us (my dh) carnivores. I am heating up a chicken pot pie in the oven. It smells heavenly….combined w/the orange chicken…ahhhhh

Who needs a holiday meal? Just come here and sniff about LOL
