Tonight’s dinner consisted of pressed tofu using my TofuXpress, cut up into little triangles, light coating of sesame oil and some salt and then a light coating of corn starch.  Fried those bad boys up.

In the meantime I used Trader Joe’s Vegetable (Vegan) Fried Rice (you can find a photo/review by clicking here) and added some scallions. Cooked that they way it supposed to be. At the same time I was browning vegetable dumplings and then added water to let them steam.

Once it was all done, I put the tofu w/the rice and let that cook a bit more, just to get some of those yummy browned bits of rice on the bottom.

Made a dipping “sauce” just w/soy sauce and scallion.

Served. Whala! (ist that how you spell it?)

My girl and dh were happy and full.

Can’t get much better than that!

I‘m serious…this stuff even I could eat every day… even the veganized version I make for the girl child.

I use it as a base and go on from there. But I do intend to get the spice mix down so I can just make a jar of it and have it handy all the time because that’s what makes it R A W K….

Tonight (forgot to take a photo) I made it in a frenzy because I forgot to make dinner. Just lost track of time. I made the entire meal in about 15 minutes. I will post tonight’s version on my Road Tests Page….

I buy it whenever it’s on sale. They sell it at Wegman’s and Fresh Market (FM). FM is a little pricier but closer to me than the nearest Wegman’s. I usually buy it at 2/$5.00  You can also order online from the Snapdragon Company along with their other (I’m sure) delicious choices. I have a feeling that their “Indonesian Peanut” variety is the same as the one pictured here but used for a different demographic.

I also want to make my own seitan. I have a mix so I’ll start from there. No, this isn’t a random remark, it’s relevant because I use it in this dish a lot. If I can deal with the mix, then I think I can handle doing the real thing but first things first… I tried the easiest method i.e., buy at Wegman’s in vacuum sealed pouches (I buy cubed for convenience, it’s the same price)… second is the easier method i.e., the mix. But I’m not quite sure third will be considered easy but I will have to let you know.

I’ve not been around for quite some time. Been super busy with health issues and boring stuff like that. But I did make an amazing veg lasagna with fake ricotta cheese. Now that is an interesting product and one, I might add, that needs UBER improvement. I dealt with it and I think it came out okay in the end.

Happy Valentine’s Day to everyone!

I bought some vegan friendly candy for my daughter and some fancy chili-mango chocolate for my husband.

It’s the one time of year where I can combine my two favourite things…the colour purple and hearts!


     ~ Tonight’s Menu ~        

French bread ~ garlic kissed and grilled with fresh bruschetta

Bella Dona Salad Redux  ~ mixed greens with vanilla tarragon vinaigrette and garnished with thinly sliced apples and crushed pistachios)*

Calamarata Pasta ~  paired with a red sauce combined with pinches of vegan sausage, wilted onions and garlic and fresh basil*

And for dessert…

 ¡Bessame mucho, mi esposo!

I’m writing this in between commercials while watching Grimm. Then off to pick up the entire reason for this blog. She’s at a friend’s house watching a movie.

My experiment I discussed in yesterday’s post was a hit for the one intended but not so much for her sibling. I liked it and my husband said it was “okay” which means tolerable. I used a jarred curry and I think it may have had too much of a lime flavor for both of them. I, personally LOVE lime in almost anything. I also think it needed some fresh cilantro/coriander. I’ll post more about it and photos tomorrow and then the recipe on my Road Tests page.

See, I knew all of you wouldn’t be able to sleep until you knew what happened with those ingredients LOL.
