This certainly has been a week of rip offs…. (((sigh)))

First I get to the medical facility, unpack and spend the night then the next day before dinner I’m told my insurance decided I don’t qualify.

So back home I went. I think I have found another solution which does not require me to be overnight away from home. Which is nice.

Then today, I drive an HOUR to Whole Foods. JUST to get Candle Cafe’s frozen meals and a few other items I can only find at WF.

WHERE WERE THE ENTREES???  I looked everywhere. I also couldn’t find seitan but then found it after I asked the cashier. It was in a weird location.

I inquired about my missing morsels and apparently “…if they’re not there, there’s no label, then we don’t carry that any more and replaced it with new items….we can order something for you by the case if you like…”

WHAT????

So I sent CC a message via their website advising them of this situation and asked if I could buy online. I’ll let you know what the gig is as soon as I hear.

The other rip off has been happening for a couple of months. My favourite stir fry dish that’s vegan (and I add to it see my “Road Tests” or “To Eat or Not to Eat” tabs) is this Peanut Stir Fry by Snapdragon Foods. I could not find it at Fresh Market, Wegmans and Whole Foods. I have searched high and low.

I finally succumbed and ordered a bunch of their vegan box stir fry stuff for an $11 shipping charge. I felt this was reasonable since I no longer have to drive all over the planet searching for them. Watch…..now I’ll find them back on the shelves.

I love these products because I add all sorts of things to them to make them more healthy and to add variety.

Anyway…that’s my deal for this week.

I‘m serious…this stuff even I could eat every day… even the veganized version I make for the girl child.

I use it as a base and go on from there. But I do intend to get the spice mix down so I can just make a jar of it and have it handy all the time because that’s what makes it R A W K….

Tonight (forgot to take a photo) I made it in a frenzy because I forgot to make dinner. Just lost track of time. I made the entire meal in about 15 minutes. I will post tonight’s version on my Road Tests Page….

I buy it whenever it’s on sale. They sell it at Wegman’s and Fresh Market (FM). FM is a little pricier but closer to me than the nearest Wegman’s. I usually buy it at 2/$5.00  You can also order online from the Snapdragon Company along with their other (I’m sure) delicious choices. I have a feeling that their “Indonesian Peanut” variety is the same as the one pictured here but used for a different demographic.

I also want to make my own seitan. I have a mix so I’ll start from there. No, this isn’t a random remark, it’s relevant because I use it in this dish a lot. If I can deal with the mix, then I think I can handle doing the real thing but first things first… I tried the easiest method i.e., buy at Wegman’s in vacuum sealed pouches (I buy cubed for convenience, it’s the same price)… second is the easier method i.e., the mix. But I’m not quite sure third will be considered easy but I will have to let you know.

I’ve not been around for quite some time. Been super busy with health issues and boring stuff like that. But I did make an amazing veg lasagna with fake ricotta cheese. Now that is an interesting product and one, I might add, that needs UBER improvement. I dealt with it and I think it came out okay in the end.

Now I am off to post the recipe….

…is just a Charcuterie.

Ha! Tricked ya, didn’t I?

In years past I would make the kids dinner and send their little butts to bed at the agreed upon time on Christmas Eve. As they got older, it became more difficult lol. After they were in bed, not sleeping, my husband and I would enjoy a nice meal served on nice china, candles glowing and a nice glass of wine. We would have this wonderful herbed quiche I would purchase from the caterer who was literally down the street and serve with it a nice mixed green salad w/a home-made balsamic dressing. We’d have music on and chat. Waiting patiently for those noisy children to finally drift off before the rush began.

The rush…hurrying to put together a million little pieces of a Micro Machines city set all packaged up in this container shaped like a van. You’d open it up and inside was a mini city that you could play with. I declare it had more than a thousand stickers… or putting together a Little Tykes toy w/o making too much noise.

Then we’d fill the stockings and put them by their doorways. They were allowed to open those when they woke up and go in each other’s rooms but they had to leave us alone until (we’d say a certain time) and only then can they come get us. THEN (we were so evil lol) we would go downstairs, making them wait at the top of the steps and have coffee and get ready, making sure the camera and video cam was ready and then we’d stand at the bottom of the stairs. We’d look up and they’d protest while giggling and we’d just sip coffee and tease them.

Finally we’d let them loose. Those were such fun times and times I hope they’ll never forget and remember with such fondness as we do.

So what does this have to do with meat … particularly on a blog about vegans?

Well with those days gone and my children in their teens and don’t just go to bed at 8:00. SO… every year we’d have a nice dinner with some seafood and a nice salad. This is not a possibility this year. One of us decided she was vegan. As I was wandering around Fresh Market tonight looking to spend money (apparently since I couldn’t just leave) and thought, I know, I’ll make a platter of assorted cheeses and meat. I was happily perusing all the lovely choices and then it hit me…DOH! We have a vegan amongst us.

I then went about and picked up grapes,  fresh made bruschetta and garlic toasted french bread rounds. Also I picked up lavash crackers and I have fresh humus already in the fridge. So we’re all set YAY!

Tomorrow I will make a vegan cheesecake for the girl child. I think everyone will eat it, shouldn’t be a problem. I do need to figure out what to serve her for her main dish. Maybe I’ll make that mushroom pie or even some “buttered” pasta and she can add veggies that I’m serving to the pasta to make a custom dish.

I should be wrapping gifts but I am happy to sit here typing and watching NCIS… gotta love the Gibbs…but that’s for another time.

PS: Isn’t that the coolest Christmas tree you ever saw? I miss the beach and the water and some day I’ll be going back there permanently…to where all our memories of Christmas as a family began…
