I am so tired of the snow….omg…MAKE IT STOP!!!!

I am in the process of making potato soup. I don’t have a recipe for soups I make. I just go for it lol.

Tonight I caramelized mushrooms w/some thyme, tarragon, salt and pepper…..it’s hard for me not to want to eat every last bit of them…. I love my ‘shrooms

I cooked off the potatoes and then sauteed the onions and garlic, added the flour then the skim milk….nutmeg, potatoes and am waiting for it to thicken as I type this post.

I added some chopped frozen spinach and a wee bit of parsely too. Should be scrummy. 😀

Psst….a good tip is to add a splash of your favourite vinegar e.g. red wine or a flavoured vinegar to  your cream soups….it helps cut back on the fat however, even when I was cooking vegan and now that I’m using skim milk, I find it adds tremendous flavour. I added a splash of tarragon vinegar and it now tastes AMAZING!

I love love love soup. My favourite daughter is at a friend’s house watching the Academy Awards.  I hope she leaves earlier than later…I don’t like her driving around in that tiny car of her in the snow on the back roads of Pennsylvania.

…POTATO???

 

Tonight’s dinner is basically potatoes. I love them. I wish I could eat them without falling somewhat ill, but that’s what I made for my vegan vixen (is that wrong to call your teenage daughter a vixen? I mean…I just wanted to be alliterative).

I procured (to try) a purple sweet potato from the market the other day along with some Yukon golds. Tonight I peeled that bad boy and yeah, it was purple alright! My favourite colour!! Now I have remnants on my hands…. I put the bits in a large measuring cup and topped them with water. Did the same to the Yukons but put them in a separate container. I nuked them until they were juuuuust about ready.

In the meantime I chopped up to a small dice, some smokey tempeh. And I crisped that up. I used the entire container and then froze the rest so I have it on hand to add to things. I do the same thing with turkey and “real” bacon for the rest of us. (Okay, now I’ve got the phrase “…festivus for the rest of us” in my head.)

Put the taters on high heat w/some oil and browned away. When ready, I added fresh chopped garlic and cooked for a bit. Then added the cooked tempeh and a handful or so of frozen, chopped kale.

Taaa Daaaaa dinner was served and I do believe it is now a favourite because….who doesn’t just love potatoes??

…wait…do Guinea Pigs oink or do they just make muffled grunts?

My family is my Guinea Pig tonight. Making Polenta Casserole (Vegan)….after reading several recipes and forums, I came up with something I think will be tasty….

I’ll be back later to update this post… if I make it out of the dining room alive!

Both of them liked it!! And they had seconds…YAY!!

Happy Valentine’s Day to everyone!

I bought some vegan friendly candy for my daughter and some fancy chili-mango chocolate for my husband.

It’s the one time of year where I can combine my two favourite things…the colour purple and hearts!

 

     ~ Tonight’s Menu ~        

French bread ~ garlic kissed and grilled with fresh bruschetta

Bella Dona Salad Redux  ~ mixed greens with vanilla tarragon vinaigrette and garnished with thinly sliced apples and crushed pistachios)*

Calamarata Pasta ~  paired with a red sauce combined with pinches of vegan sausage, wilted onions and garlic and fresh basil*

And for dessert…

 ¡Bessame mucho, mi esposo!
