So Excited!!!

I got my TofuXpress in the mail!!! I bought the package w/the light spring attachment.

I can’t wait to use it.

I was going to post after I tried it out but I’m trying to contain my excitement since I won’t be able to use it for a few days.

I’m so happy I won’t have to weigh tofu down w/cans and all that stuff. OMG.

Has anyone here used it? If so what do you think?

Did I mention I’m really excited??!!

No Never!!!!

OK that was a corny title. Oh well, you can’t say I didn’t try. Plus it rhymes…that alone makes it magical.

Let’s face it, burritos can be a boon to vegetarians and vegans … much like the “wrap” has made life so much easier for lots of people. This, however has never been a huge surprise to me. I grew up around Latin cultured people. A “wrap” was “tortilla with (insert filling here) in it” that’s all… or someone would say, “can I have a cheese tortilla?” and this means you heat a tortilla on a gas flame and dump some cheese in, fold it in thirds and whala..a wrap/portable quesadilla/tortilla y queso.  So I have found all this “spinning” of a simple way of eating annoying.

And before I get off my soapbox …. a burrito, imho, is a tortilla with beans and rice and that’s all. Some condiments maybe and maybe sometimes a hunk of meat but I just don’t see making into this HUGE amazing new thing by chain restaurants.

Oh and don’t get me started on the chimichanga…

….of ingredients just waiting to be made into something great.

Well, maybe not great, but it will be tasty. I hope. I was bored earlier…

I sauteed off some mushrooms using vegan lard and adding thyme, freshly ground salt and pepper and a smidgen of garlic powder (mostly because that’s all I had left lol). I like to caramelize my veggies. And that’s kind of what I did to the mushrooms. I could eat an entire bowl of these mushrooms and still want more.

A month or so ago, the owner of LD Nails, Allentown, who makes my hands beautious, made a dish for my daughter to try. She’s Vietnamese. Her tofu in the dish was kind of odd-shaped and looked like fresh mozz that was stretched in funny ways. The food was delish. When I asked about how she got the tofu to look like that (which she says bean curd and never tofu), she thought I was pretty funny. Finally she figured out what I meant and I believe she said she used soft tofu, not silken. So that’s what I used tonight. Soft bean curd.

I tried to shape it but that doesn’t work. So I just ripped off chunks of it…I felt like a barbarian…and kind of smushed them and then tossed them into the hot vegan lard. I then added some soy sauce, and I really need help with this…it just got on some of the tofu and immediately was absorbed and so I madly stirred the stuff around to spread the love. I was trying to be careful because I didn’t want to cause the pieces to break up. I cooked it for a while and there was too much liquid to fry up properly. I realised then I should have pressed it a bit. So I let it all cook out and proceeded.

ANYWAY…. I added another pat of lard and then a dash of sesame oil and let it all sit there cooking. I left the room. When I started to smell something I went back in. It was all brown and crispy-ish on one side.  I turned over the pieces I thought really needed it and cooked them until there was some colour on the other side.

I tasted them after they had cooled off and drained and they were very nice. I liked the way it tasted. I was getting sick of the whole soft food deal. I do have teeth and so does my kid.

Tomorrow I will decide what to make…well I’ll be making it up as I go. I’ll post about it after it goes down.

Cookies!!! YESSSSS!! 

My daughter made cookies yesterday afternoon ~ snickerdoodles, oatmeal raisin, chocolate chip and cutouts. Here is a phone camera shot of them below, not the best shot but it will do. Tonight she made chocolate chip cookies and they were AMAZING!! OMG.

Today I went to Whole Foods. The ENTIRE reason I wanted to go there was to buy Grainassance’s mochi sheets. I left there after spending $221 … nope, that’s not a mistake. (((Sigh…HUGE Sigh))) 

I bought a lot of stuff that normally, under any other circumstance, I wouldn’t buy … and I bought more than one. Whole Foods is about an hour from my house and not a place I would frequent except MAYBE once/month. I bought Earth Balance butter and “frying” butter i.e., lard. I bought one of the former and two of the latter. I bought several types of pre-prepared food from their “salad/food” bar(marinated tropical teryaki grilled tofu; “egg” salad; green bean dish). I bought three different types of pints of ice cream, several types of different vegan  yogurt, different “food” bars, fruit snacks, veggie sticks/chips and other assorted snack bags; organic baking ingredients; smart links and bacon; pie crusts; frozen meals (omg $5+ a pop).

Also I bought things like a healing lotion that’s vegan for my daughter, an odor eliminator that was $7; a vegan magazine; chicken curry salad for moi; I can’t remember the rest. But I will say I was VERY shocked at the bottom line. I thought maybe $125. Man oh man.

I was excited to be able to buy things that I can buy at my grocery store but they only have one flavor of the product or some other such thing. A lot of the stuff I bought was to taste how it “should” taste so that when I make it, I have a marker to work towards and possibly improve.

It’s kind of exciting to learn a whole new way of cooking and I will not be able to continue to spend this kind of money … I want to be able to make a lot of this from scratch and I know I can…I’m an excellent gourmet cook but haven’t been able to cook as such since children LOL.

I’ve babbled enough…the typings of a tired, old mom. 😀
