I am so tired of the snow….omg…MAKE IT STOP!!!!

I am in the process of making potato soup. I don’t have a recipe for soups I make. I just go for it lol.

Tonight I caramelized mushrooms w/some thyme, tarragon, salt and pepper…..it’s hard for me not to want to eat every last bit of them…. I love my ‘shrooms

I cooked off the potatoes and then sauteed the onions and garlic, added the flour then the skim milk….nutmeg, potatoes and am waiting for it to thicken as I type this post.

I added some chopped frozen spinach and a wee bit of parsely too. Should be scrummy. 😀

Psst….a good tip is to add a splash of your favourite vinegar e.g. red wine or a flavoured vinegar to  your cream soups….it helps cut back on the fat however, even when I was cooking vegan and now that I’m using skim milk, I find it adds tremendous flavour. I added a splash of tarragon vinegar and it now tastes AMAZING!

I love love love soup. My favourite daughter is at a friend’s house watching the Academy Awards.  I hope she leaves earlier than later…I don’t like her driving around in that tiny car of her in the snow on the back roads of Pennsylvania.

Hi everyone!

My life has been filled with many, many challenges…as well as my daughter’s challenge’s…physical-emotional-mental….life is life.

She, in preparation to a month long trip to Japan in August of 2013, decided to go ovo-lacto vegetarian as it is extremely difficult to be vegan in Japan … especially as a visitor.  She wanted to make sure she was tolerant of this lifestyle before she left.

My girl is so smart…wise beyond her years and I am so very proud of her.

Since then, she has remained on this lifestyle path. Maintaining a vegan type mind but eating the ovo-lacto way. She is happier. I am happy for her as I am happy if she is happy.

I will be updating this blog soon. I wanted to say hi and that I missed all of you. I have gotten your private emails and messages and I appreciate them all 🙂

I mean just look at it!!  {This calzone was made by LaBorgata Pizzeria and Restaurant. Their cannolis are also AMAZING!}

I love, love, LOVE, calzones. The rich creamy goodness of the ricotta and the melty cheese….o.m.g.  I like them plain the best but in order to eat something that makes me feel like

 I’m eating something good for me, I usually get a spinach one.

Now when I first got this monstrosity I had never seen a calzone shaped like this. I have only ever seen the half-moon shape. This design is easier to cut and portion out but it looks like a snake haha.

One day when I went to pick up my order, the owner’s wife told me that it really doesn’t matter what size you order, he just makes it bigger anyway and goes a little nuts with it. Too funny. After she says this to me she rolls her eyes … I feel her pain…after all I’ve been with the same guy for over 31 years. I know her angst haha. They are  this older married couple, short, Italian, with white hair, both with glasses and are so very cute. He putzes around and does his thing and gets all excited when you come to get a calzone. Something I’ve witnessed in the past…he doesn’t get all excited when you come to get a pizza ~ too funny.

While this amazing piece of culinary delight is not vegan, it is vegetarian and therefore, okay to eat … I said so. It’s a rule.

Finally something close to New York style pizza in this town. YAY!
